Biscuit & Custard Pudding

This easy biscuit custard pudding recipe is my long time favourite as my cousin used to make it when I was new to Mumbai. These taste absolutely delicious when chilled.

Ingredients

For custard
  • 2 cup (500ml) milk
  • 3 tablespoon custard powder
  • ¼ cup (50g) sugar
For assembling
  • 2 medium sliced banana
  • 1 cup mixed fruit jam
  • 7-8 parle-g biscuits packets
  • ¼ cup (60ml) milk (to dunks the biscuits in it)

Steps In Making

The custard
  1. In a small bowl add custard and few tablespoon of room temperature milk and give it a good mix. Now keep it aside.
  2. In a heavy bottom pan over medium flame add milk and bring it to a boil for 3-4 times, while stirring it occasionally.
  3. Add the custard in the milk and while stirring it continuously cook for 3-4 minutes or until it becomes slightly thick.
  4. Finally add sugar and mix till the it melts completely and cook for another 2 minutes.
  5. Switch off the flame and let the custard cool down completely.
Assembling the pudding
  1. In a bowl take jam and with the help of a whisk, beat till it becomes soft and gets a thin consistency.
  2. Take a parle-g biscuit and with the help of a spoon or knife apply some jam on the biscuit and evenly spread it. Now cover it with another biscuit and make a sandwich. Do the same with the rest of the biscuits too.
  3. In another bowl take some cold milk and dunk the biscuit sandwich it in once, immediately place it in a serving dish and cover the bottom with it, placing one biscuit sandwich next to the other.
  4. Now pour a layer some custard on it and spread it evenly.
  5. Further cover it with thin slices of banana’s.
  6. Once again repeat the same process and place the sandwiched biscuits dunked in milk on top of the banana slices.
  7. Pour another layer of custard and then spread some dollops of jam on it.
  8. Finally place the third and last layer of the biscuit sandwich followed by the final layer of custard.
  9. Now pipe some jam in a piping bag and make diagonal lines of the biscuit & custard pudding or any design of your choice.
  10. Keep it in the refrigerator to set for 4-5 hours before serving.

Recipe Notes

  • You can use any jam and fruits of your choice.

Step By Step In Pictures For Biscuit & Custard Pudding

4. The milk has started to boil.

5. Now add the custard in the milk and while stirring it continuously cook for 3-4 minutes or until it becomes slightly thick.

6. The custard has become slightly thick.

7. At this point add sugar and let it melt completely. Cook for another 2 minutes/

8. The custard is ready, now let it  cool down completely.

9. In a bowl take jam.

10. With the help of a whisk, beat till it becomes soft.

11. The jam has a thin consistency now.

12. Take a parle g biscuit.

13. With the help of a spoon or knife apply some jam on the biscuit and evenly spread it.

14. Now cover it with another biscuit and make a sandwich. Do the same with the rest of the biscuits too.

15. In another bowl take some cold milk and dunk the biscuit sandwich and then set it in a serving dish.

16. We have made a layer of biscuit sandwich.

17. Now pour some custard and spread it evenly.

18. After spreading the custard evenly on the biscuit sandwich, cover it with slices of banana’s.

19. Once again repeat the same process and place the sandwiched biscuits dunked in milk on top of the banana slices.

20. Pour the custard layer.

20. Spread some dollops of jam on it and spread it.

21. Cover with the last layer of biscuit sandwich.

22. Finally top it with the final layer of custard too. Now pipe some jam in a piping bag.

23. Make diagonal lines of the biscuit & custard pudding or any design of your choice.

24. Keep it in the refrigerator to set for 4-5 hours before serving.
