Cheesy Garlic Bread

Ingredients

For dough
  • 2 cups refined flour/maida
  • 1 cup curd/dahi
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoon oil (any flavourless oil)
  • 3-4 tablespoons water for kneading
For garlic butter
  • ¼ cup butter (room temperature)
  • 3-4 garlic cloves (finely chopped)
  • 2 teaspoons fresh coriander/parsley (finely chopped)
For the cheese filling
  • 1 cup mozzarella/processed cheese
  • 3 tablespoons capsicum (finely chopped)
  • 3-4 black olives (roughly chopped)
  • 1 teaspoon oregano/mixed herbs
  • 1 teaspoon chilli flakes

Steps In Making Cheesy Garlic Bread

The pizza dough
  1. In a large bowl add refined flour, salt, baking powder and baking soda and mix.
  2. Now add curd and mix again.
  3. Slowly add little water at a time and knead for about 3-4 minutes. The dough will be little sticky in the beginning but it will eventually become soft after kneading it for some time. Add oil and knead for a couple of minutes more.
  4. Now grease a bowl with some oil and put the dough in it. Cover it with a cling wrap or a wet cloth and keep it aside for around 30 minutes.
  5. After 30 minutes the dough will soft and will have a shiny texture. Knead for another couple of minutes. The dough is ready to be used.
For the garlic butter
  1.  In a small bowl add soften butter, chopped garlic and coriander and mix till everything is well combined. The garlic butter is ready.
For garlic bread
  1. Pre-heat the oven at 250 °C for 10 minutes.
  2. Divide the pizza dough into 2 equal parts and form round balls.
  3. On a plain surface, dust some refined flour and roll each dough ball into a thick chapati with the help of a rolling pin.
  4. Now apply the garlic butter we prepared earlier evenly on the chapati avoiding the sides.
  5. On one side spread of the garlic bread, spread the grated cheese and top it with some chopped capsicum and pickled olives.
  6. Apply water on the sides of the chapati, it will act as a glue.
  7. Now gently hold one side of the chapati and roll it on the other side and close it. With the help of your finger press the corners firmly, so the garlic bread doesn’t open while baking.
  8. Further evenly apply garlic butter on the surface of both the garlic breads.
  9. Make light slit marks on the garlic bread, don’t cut them all the way.
  10. Top it with some chilli flakes and oregano. In the preheated oven, place the garlic bread in the middle rack and bake it bake for around 20 minutes or until done at 250 °C
  11. Serve with cheese sauce or tomato ketchup.

Recipe Notes

  • Let the dough rest for 30 minutes, this will give the garlic bread a nice soft texture.
  • Always grease the bowl with some oil before resting the dough, else it might stick to the bowl.
  • While making the garlic butter make sure the garlic is soft, it shouldn’t be very hard, else you won’t be able to mix it.
  • Do not apply butter around the edges of the garlic bread after rolling, else it won’t stick properly and might open while baking.
  • Apply water before folding and sealing the garlic bread, else it might open while baking.
  • Don’t make deep slit marks on the garlic bread, else the cheese will ooze out while baking.
  • Don’t add extra cheese else it might ooze out.

Step By Step In Pictures For Garlic Bread

  1. In a large bowl add refined flour, baking soda, baking powder and salt and mix till everything is well combined.

4. Add little water at a time if needed and knead to form a soft dough.

5. The dough is sticky at this point, but once you keep kneading it will get a smooth and shiny surface.

6. The dough looks perfect now.

7. Add some oil in the bowl so the dough doesn’t stick to it when you keep it to rest.

8. Cover it with a cling wrap or a lid and let it rest for for 30 minutes.

9. Meanwhile to prepare garlic butter in a bowl add soft butter, chopped garlic and coriander leaves/parsley.

10. Mix till everything is well combined. The garlic butter is ready.

11. Now after the dough has rested for 30 minutes, knead it for a minute and divide it into two equal halves.

12. Now make a round ball.

13. With the help of a rolling pin roll into a thick chaptai.

14. Dust some refined flour if required so it doesn’t stick to the rolling pin.

15. Make sure the chapati is not very thin.

16. Now apply the garlic butter we prepared earlier evenly on the chapati avoiding the sides.

17. On one side spread the grated cheese.

15. Top it with some chopped capsicum and pickled olives.

16. Apply water on the sides of the chapati, it will act as a glue.

17. Now gently hold one side of the chapati and roll it on the other side and close it. With the help of your finger press the corners firmly, so the garlic bread doesn’t open while baking.

18. Evenly apply garlic butter on both the bread’s.

19. Make light slit marks on the garlic bread, don’t cut them all the way.

20. Top it with some chilli flakes and oregano. In a preheated oven place the garlic bread in the middle rack and bake it bake for around 20 minutes or until done.

21. Let them cool down for couple of minutes before serving.

22. Enjoy the hot cheesy homemade garlic bread with a cheesy dip or a ketchup.
