Ingredients
For Sabudanan Vada
- 1 cup sabudana
- 1 cup water
- 1 cup peanuts
- 2 green chillies finely chopped
- 1 inch ginger grated
- 1 teaspoon cumin seeds
- 4 tablespoons fresh coriander
- salt to taste
- 2 medium boiled potatoes
- 1 tablespoon lemon juice

Steps In Making Sabudana Vada
- Wash sabudana 3-4 times to remove the excess starch and soak it in water. Now let it soak for 5-6 hours or preferably overnight.
- Once done the sabudana will soak all the excess water and double in size.
- In a pan dry roast the peanuts for 3-4 minutes on medium heat. To remove the skin, place the peanuts on a clean kitchen towel and gently rub them. Now grind them in a mixer grinder till it gets a coarse texture.
- To make the sabudana vada in a large bowl add soaked sabudana, green chillies, grated ginger, cumin seeds, fresh coriander, roasted peanuts, salt and gently mix everything.
- Now take 2 boiled potatoes and mash them with the help of your hand, along with fresh lemon juice. Now gently mix till everything is well combined. Do not mash or extensively rub the sabudana as we want a crispy texture.
- Once done make small balls of the sabudana vada mixture and then gently press them in between your palms to lightly flatten them. Similarly shape all the sabudana vada and then let them rest in the refrigerator for upto 10 minutes.
- Once done fry them in medium hot oil for 3-4 minutes from each sides till they get a golden colour and crispy texture.
- Serve hot with the green chuntey and sweet dahi we prepared. This recipe will give you 13 medium size sabudana vadas.
Recipe Notes
- Always fry them in medium hot oil, if you will fry on low heat then the sabudana vadas will soak excess oil and if you will fry on very high heat then they will remain uncooked from the inside.
- Do not add extra boiled potatoes else you wont get crispy sabudana vadas.

- 3 green chillies
- 1 small piece ginger
- 2 tablespoons peanuts
- ½ teaspoon cumin seeds
- ¼ teaspoon sugar
- salt to taste
- water as required
Steps In Making The Green Chutney
- In a mixer grinder add all the ingredients mentioned above and grind until smooth. the green chutney is ready.
