Crispy Veg Burger

In this crispy veg burger recipe, I will show you how you can make a delicious patty using vegetables and a yummy burger sauce using only 4 ingredients. Perfect for vegetarians who are looking to indulge in something sinful, but homemade.

Ingredients

For Vegetable patties
  • 4 boiled potatoes (medium size)
  • ¼ cup carrot (finely chopped)
  • ¼ cup green capsicum (finely chopped)
  • ¼ cup red bell pepper (finely chopped)
  • ¼ cup yellow bell pepper (finely chopped)
  • ¼ cup boiled peas
  • ½ teaspoon cumin seeds
  • ½ teaspoon cumin powder
  • ½ teaspoon dry mango/amchoor powder
  • ½ teaspoon red chilli powder
  • 2-3 tablespoons oil
  • salt to taste
  • oil for frying
For assembling the burger
  • 4 burger buns
  • 4-5 iceberg lettuce leaves
  • 1 onion (medium) sliced
  • 1 tomato (medium) sliced
  • ¼ cup mayonnaise
  • 4 tablespoons tomato ketchup
  • ½ teaspoon red chilli flakes
  • ½ teaspoon oregano/mixed herbs
  • 2-3 tablespoons butter
To coat the vegetable patties
  • 2 tablespoons corn flour
  • 2 tablespoons refined flour
  • 5-6 tablespoons of water
  • 1 cup bread crumbs

Steps In Making

The Vegetable patties
  1. In a pan over medium heat add oil and once it becomes hot add cumin seeds and let them pop.
  2. Now add all the veggies- finely chopped carrots,red and yellow bell peppers, green capsicum and boiled peas and saute for couple of minutes. Now cover it with a lid and let it cook for 3-4 minutes or until the veggies turns soft.
  3. Once done, mash the veggies a little, especially the green peas.
  4. Now add the spices, cumin powder, red chilli powder, dry mango powder and salt and mix till well combined. Add a tablespoon of water if needed.
  5. Now add the boiled potatoes and mix till everything is well incorporated, make sure there are no large potato lumps left.
  6. Transfer the veg patties mixture on a plate and let it cool down for few minutes.
  7. Now take some mixture in between your palm and make round patties- big or small depending on the size of your burger buns.
  8. For coating the veg burger patties we need bread crumbs and slurry. To prepare the slurry, in a bowl add refined flour, corn flour and some water and mix till well combined. It will have a medium consistency, not very thick nor thin.
  9. Now evenly roll the patties in the bread crumbs and then gently roll them in the slurry and then finally in the bread crumbs once again.
  10. In a pan over medium flame add oil and once it becomes hot add the pattie and shallow fry them from both the sides till crispy golden brown. It will take around 3-4 minutes. Now transfer it on a tissue paper to remove excess oil.
Burger Mayonnaise
  1. To make the burger mayonnaise, in a bowl add mayonnaise, ketchup, mixed herbs and chilli flakes. Mix till everything is well combined.
Assembling the burger
  1. To toast the burger buns, cut them into two from the center and evenly spread butter on it.
  2. In a pan over medium flame add the burger buns and toast them for couple of minutes till it gets a golden crust.
  3. To assemble the veg crispy burger bun, spread the burger mayonnaise on the bottom half of the bun, now place the iceberg lettuce, followed by the burger pattie, onions, tomatoes and cheese slice. Add some more burger mayonnaise on the top and cover it with the burger bun.
  4. Serve hot!

Recipe Notes

  • You can add any veggies of your choice. Like beans, finely chopped cabbage, cauliflower, etc.
  • If your veg patties mixture has become very soft then add some bread crumbs.
  • If you don’t have refined flour, then you can make the slurry only with the corn flour too.
  • We have double coated the patties in the bread crumbs for perfect crust.
  • After coating the patties, you can let them rest in the refrigerator for 10 minutes, so it firms up and doesn’t break.

10. Transfer the veg patties mixture on a plate and let it cool down for few minutes.

11. Now take some mixture in between your palm and make round patties- big or small depending on the size of your burger buns.

12. For coating the veg burger patties we need bread crumbs and slurry. To prepare the slurry, in a bowl add refined flour, corn flour and some water and mix till well combined. It will have a medium consistency, not very thick nor thin.

13. Evenly roll the veg patties in the bread crumbs.

14. Now gently dip them in a slurry once.

15. Roll them in the bread crumbs once again. We have double coated the patties in the bread crumbs for perfect crust.

16. In a pan over medium flame add oil and once it becomes hot add the pattie and shallow fry them from both the sides till crispy golden brown. It will take around 3-4 minutes.

17. The veg pattie has got a perfect brown colour. Now transfer it on a tissue paper to remove excess oil.

18. To make the burger mayonnaise, in a bowl add mayonnaise, ketchup, mixed herbs and chilli flakes.

19. Now mix till everything is well combined.

20. To toast the burger buns, cut them into two and evenly spread butter on it.

21. In a pan over medium flame add the burger buns and toast them for couple of minutes till it gets a golden crust.

22. Toast it slightly from the opposite side too.

23. To assemble the veg crispy burger bun, spread the burger mayonnaise on the bottom half of the bun, now place the iceberg lettuce, followed by the burger pattie, onions and tomatoes.

24. Now add a cheese slice, some more mayonnaise and cover it with the second half burger bun and serve hot.
