Ingredients
- 1½ cup (200g) whole wheat flour/atta
- ½ cup (70g) refined flour/maida
- 2 tablespoons clarified butter/ghee
- water as required
- 2 tablespoons clarified butter/ghee
- 2 cups (200g) fresh grated coconut
- 1 cup jaggery/gud
- 5-6 cashews roughly chopped
- 5-6 almonds roughly chopped
- 2 tablespoons raisins
- 1 teaspoon cardamom/elachai powder
- oil for frying

Steps In Making Fried Modak
- To make the dough, in a large bowl add whole wheat flour, refined flour and hot ghee. Mix till everything is well combined.
- Now add little water at a time and knead for 5-6 minutes and form a stiff dough.
- Add a teaspoon of ghee and knead for another minute. Now cover the dough and let it rest for 10 minutes.
- To make the filling, in a pan heat the ghee and then add freshly grated coconut and roast for a minute.
- Now add jaggery and cook for 2-3 minutes or till the jaggery melts completely. The mixture should not have lot of extra moisture else the modaks might become soggy and break while frying.
- Lastly add chopped almonds, cashews, raisins and cardamom powder. The filling is ready now let it cool down completely.
- To make the modaks, take the dough and dust it with some wheat flour and roll it into a big chapati. It should not be very thick, nor thin. Now with the help of a cookie cutter or katori cut it into small round shapes.
- Now take one small chapati and fill a tablespoon of the coconut stuffing in the centre. Now apply some water on all the sides and gently lift it from one side and fold them (as shown in the video)
- Give a conical shape on the top of the modak and seal it tightly with your fingers. Similarly shape all the modaks.
- Now heat ghee/oil and and fry the modaks for 7-8 minutes or until golden brown in colour.
- Remove them on a tissue paper and serve them hot! Fried modaks are ready.
Recipe Notes
- If you don’t like maida then replace it with equal amount of whole wheat flour.
- Instead of jaggery you can also use sugar.
- You can also use milk for kneading the dough.
- Always fry modaks on medium flame else they wont cook properly from the inside.
