Gud Wali Chai

I am a chai lover and I today I will be sharing the recipe of gud wali chai. It has a great flavour and aroma because of the freshly grounded spices we add in it. If you are a chai lover then you will enjoy this recipe.

Ingredients

  • 1½ cups water
  • 1 cup milk
  • 3 teaspoons tea powder
  • ¼ cup jaggery/gud
  • spices- 5-6 cardamom, 5 cloves, 4-5 black pepper corn, 1 small ginger piece

Steps In Making Gud Wali Chai

  1. Crush all the dry spices, cardamom, cloves and black pepper and then add ginger and crush till everything becomes fine.
  2. In a pan over medium flame add water and crushed spices. Bring them to a boil, the colour of the water will slightly change and the spices will release it’s aroma. It will take around 2 minutes.
  3. Now add tea powder and jaggery and boil it for another minute.
  4. In another pan add milk and bring it to a boil.
  5. Now add the boiled milk in the tea decoction and mix well. Do not boil, else the tea might curdle.
  6. Switch off the flame and with the help of a strainer, strain the tea.
  7. Serve hot with parle-g biscuit, cookies or pakode.

Recipe Notes

  • Always add hot boiled milk in the tea, else the tea will curdle. Never add cold milk.
  • Do not cook the tea after adding the milk, just simmer for 10-20 seconds and immediately switch off the flame, else the milk will curdle.
  • You can use any spices of your choice. Even lemon grass adds a nice flavour to the tea.
  • If you prefer a very strong or sweet gud wali chai then you can adjust the ratio of tea powder and jaggery/gud as per your taste.
  • Can use low fat or full fat milk, both tastes good but full fat milk will give a thick creamy texture.

5. Add tea powder.

6. Add jaggery and mix till the jaggery melts completely.

7. In another pan add milk and bring it to a boil.

8. Now add the boiled milk in the tea decoction and mix well.

9. Do not boil, else the tea might curdle.

10. Switch off the flame and with the help of a strainer strain the tea and serve hot!
