Healthy Granola Bar Recipe – No Bake, No Oven and Sugar-Free

This healthy granola bar recipe is so quick and easy to make. It’s a no bake recipe, which means no baking or oven is required for this one! It has a delicious chewy texture and it’s a perfect healthy snack without any sugar or oil, great for weight watchers and health conscious people. Also, it’s perfect for people who don’t like oats because I am sure with this granola bar recipe they will fall in love with oats for sure. Enjoy!

Ingredients

  • 1 ½ cup (150g) instant oats/rolled oats
  • 1 cup (225g) dates/ khajur
  • ½ cup (12.5g) puffed rice/ murmura
  • ¼ cup (35g) almonds/ badaam
  • ¼ cup (31g) dried cranberries
  • ¼ cup (60ml) peanut butter
  • ¼ cup (60ml) honey
  • ¼ cup (32g) pumpkin seeds
  • 1 tablespoon flax seeds/ alsi
  • ¼ teaspoon salt

Steps In Making Healthy Granola Bar Recipe

  1. Remove the seeds of the dates and then in a high power mixer grinder or food processor add the dates and grind them well.
  2. In a pan over medium heat dry roast the oats for 2-3 minutes, once done keep them aside,
  3. Similarly dry roast the puffed rice for 2-3 minutes and once done keep them aside.
  4. Now dry roast the almonds, pumpkin seeds, flax seeds for 2-3 minutes.
  5. Remove all the above ingredients in a large bowl, add salt and dried cranberries and mix well.
  6. In a pan over medium flame add peanut butter and honey and mix till it melts. (don’t have to cook, just melt it)
  7. Add the liquid ingredients into the large bowl of dry ingredients.
  8. Now add the paste of dates and with the help of your hands mix everything till well combined.
  9. Take a tray or plate and grease it with butter and immediately pour the granola bar mixture in it and flatten the top with the back of a spoon or your fingers and press them together.
  10. Sprinkle some pumpkin seeds and cranberries and press them with slightly.
  11. Keep it in the refrigerator to set for atleast 2 hours.
  12. Cut them in square or rectangle shape.
  13. Store in an air tight container in the refrigerator for upto 2 weeks.

Recipe Notes

  • Any dried fruits or nuts of your choice can be used, just keep the final measurements of the dried fruits same.
  • Both instant and rolled oats can be used for this granola bar recipe
  • Make sure to grease the tray with butter, else the granola bar will stick to it.
  • Always dry roast the oats, puffed rice and nuts for better taste, crunch and flavour.

6. Nuts are roasted now.

7. Add the oats in the same bowl.

8. Add dried cranberries and mix.

9. Add salt and mix well.

10. In a pan over medium flame add peanut butter.

11. Add honey.

12. Cook for around 2 minutes till it melts.

13. Once done add the same into the dry ingredients.

14. Add dates.

15. With your hand or a spoon mix till everything is well combined.

16. Remove the granola bar mixture on a tray greased with butter.

17. Even the top with the back of a spoon and press them together.

18. Sprinkle with some pumpkin seeds and dried cranberries. (optional) Keep it in the refrigerator to set for atleast 2 hours.

19. Cut them in square or rectangle shape.

20. Store in an air tight container in the refrigerator for upto 2 weeks.
