Healthy Vegetable Oats Idli

Quick and easy to make soft and fluffy healthy vegetable oats idli.

Ingredients

  • 1 cup oats
  • 2 tablespoons vegetables oil
  • ½ teaspoon mustard seeds
  • ½ teaspoon roasted chana dal
  • ½ teaspoon urad daal
  • ½ teaspoon ginger finely chopped
  • 5-6 curry leaves
  • 1 cup carrot grated
  • ½ cup capsicum finely chopped
  • ½ cup yellow bell pepper finely chopped
  • salt to taste
  • ¼ teaspoon turmeric powder
  • ½ cup semolina/suji/rawa
  • 1 cup curd/dahi
  • 1 tablespoons fresh coriander finely chopped
  • water as required
  • ½ teaspoon baking soda

Steps In Making

  1. In a pan dry roast the oats for 2-3 minutes on medium flame.
  2. Now grind them in a mixer grinder till it forms into a fine powder and keep it aside.
  3. In a pan add oil and once it turns hot add mustard seeds, urad dal and roasted chana dal. Roast them for a minute until the colour changes to light golden.
  4. Now add ginger and curry leaves and toss them for a minute.
  5. Further add carrots, capsicum and yellow bell pepper and cook for a minute. Do not over cook them.
  6. Now add salt and turmeric powder and mix well.
  7. Lastly add the semolina and roast for 2 minutes on medium flame.
  8. Once done, transfer it in a large bowl. Now add the oats powder, curd, fresh coriander, water and mix well. Let it rest for around 10 minutes.
  9. After 10 minutes check the batter consistency, if it has become slightly thick then add few tablespoons of water. The batter will have a medium consistency, like a normal idli batter.
  10. Finally add baking soda and mix well. The oats idli batter is ready.
  11. To steam the idli’s take a idli stand and fill it 1/3 with water, the bottom of the idli plate shouldn’t touch the water.
  12. Now grease the idli plate with oil and pour the prepared oats idli batter in it.
  13. Place the idli plate in the steamer, cover it with a lid and steam the oats idli’s for around 15 minutes.
  14. To check if the idli’s are perfectly cooked, put some water on the tip of your finger and touch the idli. If the batter doesn’t stick, it means the idlis are ready.
  15. Let the vegetable oats idli’s rest in the idli plate for 2 minutes before scooping them out, else they might break.
  16. Serve hot with sambhar and chutney.

Recipe Notes

  • You can use instant or rolled oats.
  • You can use any vegetables of your choice.
  • Never over cook the idli’s else they will become hard.
  • Grease the idli plate with oil, else the idli will stick and wont come out easily.
  • You can replace baking soda with fruit salt/eno
