Instant Medu Vada

If you love quick recipes then you will love this instant medu vada. It can be made in 20 minutes and does not require any soaking of dal or grinding. So next time whenever you feel like having hot vadas with a cup of chai, do give this quick and easy recipe a try.

Ingredients

  • 1 cup curd
  • 1 cup rice flour
  • 1 cup water
  • 1 medium onion, finely chopped
  • 1 inch ginger, finely chopped
  • 2 green chillies, finely chopped
  • 2 tablespoons fresh coriander
  • ½ teaspoon cumin/jeera
  • 1 teaspoon crushed black pepper
  • 1 pinch asafoetida/hing
  • salt to taste
  • oil for frying

Steps In Making

  1. In a large bowl add curd, water and mix well.
  2. Now add rice flour in two batches and mix till it forms into a smooth batter.
  3. Further add cumin seeds, salt, ginger, green chillies, crushed black pepper, asafoetida and mix.
  4. Now pour the batter in large pan and over medium flame keep stirring it continuously till it forms into a thick dough. Now switch off the flame.
  5. Lastly add chopped onions and fresh coriander and mix till everything is well combined.
  6. Let it rest for 5-7 minutes, till it cools down a bit.
  7. To make the vada, grease your palms with some oil. Now take a spoonful of batter in between your palms and give it a round shape and then press them a little. Put some oil on your finger and then make a center in the middle of the vada with the greased finger. Similarly make the rest of the vadas.
  8. Place a kadai over medium flame and add oil in it. Once it turns hot, add the medhu vadas and fry for 3-4 minutes from each sides or until golden brown in colour.
  9. Serve immediately with sambhar or chutney.

Recipe Notes

  • Measure all the ingredients like, curd, water and rice flour from the same cup. The ratio will be 1:1:1
  • You can skip onions if you do not like them in your medhu vada.
  • Make sure the oil is medium hot. If the oil is not hot enough then the medhu vada will not become crispy and will soak the oil. If its too hot then it will cook from the outside but remain uncooked from the inside.

10. Let it rest for 5-7 minutes, till it cools down a bit.

11. To make the vada, grease your palms with some oil. Now take a spoonful of batter in between your palms and give it a round shape and then press them a little. Put some oil on your finger and then make a center in the middle of the vada with the greased finger.

12. Similarly make the rest of the vadas.

13. Place a kadai over medium flame and add oil in it. Once it turns hot, add the medhu vadas and fry for 3-4 minutes from each sides or until golden brown in colour.

14. The vadas have got a lovely colour, now remove them on a plate.

15. Serve hot!
