Kala Chana Chaat

Ingredients

Boil Kala Chana
  • 1 cup kala chana
  • 3-4 cups water
  • ½ teaspoon salt
Prepare Masala wale kale chane
  • 2 tablespoons oil
  • 1 teaspoon cumin seeds
  • 2 bay leaf/tej patta
  • 1 star anise
  • 5-6 black pepper corns
  • 1 pinch asafoetida/heeng
  • 1 tablespoon ginger garlic paste
  • ½ teaspoon kashmiri red chilli powder
  • 2 teaspoons coriander powder
  • ½ teaspoon kuti lal mirch/chilli flakes
  • ¼ teaspoon turmeric powder
  • 1 teaspoon kasuri methi
  • salt to taste
Assemble Kala Chana Chaat
  • ¼ cup tomatoes finely chopped
  • ¼ cup onions finely chopped
  • 1 cup boiled potatoes, diced
  • ¼ cup pomegranate
  • 2 tablespoons raw mangoes finely chopped
  • 2 tablespoons fresh coriander
  • 1 green chilli finely chopped
  • ½ teaspoon amchoor powder
  • ¼ teaspoon chaat masala
  • ½ teaspoon cumin powder
  • ¼ teaspoon garam masala
  • 1 tablespoon lemon juice

Steps In Making

Boil Kala Chana
  1. Soak kala chana in hot water overnight.
  2. In a pressure cooker add the kala chana, water and salt. Now pressure cook on medium heat for 15-20 minutes or until they become soft.
  3. Once the kala chana’s are boiled remove them in a bowl and keep ¼ cup boiled chana water aside.
Prepare Masala wale kale chane
  1. In a pan heat oil.
  2. Now add bay leaf, cumin seeds, star anise, black pepper corns and asafoetida. Sauté them for few seconds.
  3. Add ginger garlic paste and cook for a minute.
  4. Now lower the gas flame and add red chilli powder, coriander powder, kuti lal mirch and turmeric powder and cook for few more seconds.
  5. Now add the boiled chana’s along with ¼ cup of the boiled chana water. Now let the chana cook till the water evaporates completely and the masala sticks to the chana.
  6. Now add the kasuri methi and some more salt if needed. The masala chanas are ready. Let them cool down a bit.
Assemble Kala Chana Chaat
  1. To prepare the kala chana chaat in a large bowl add the masale wale chane.
  2. Now add tomatoes, onions, boiled potatoes, pomegranate, raw mango, fresh coriander, green chillies, amchoor powder, chaat masala, cumin powder, garam masala and lemon juice. Mix till everything is well combined.
  3. The kala chana chaat is ready. Serve immediately.

Recipe Notes

  • While cooking the kala chana with the spices make sure to add the boiled chana water for added flavour and taste.
  • You can add cucumber, beetroot too.
  • For extra spice you can also add some green chutney and tamarind chutney.
