Khajur Burfi Recipe

This Khajur Burfi recipe is sugar-free and is a perfect snack for health conscious people. The best part about this Khajur Burfi is that it’s very simple and easy to make and takes no time, and it can last for a month. So you can make this in advance and enjoy for the entire month. Various dried fruits and nuts increases the over all nutritional value of this delicious snack!

Ingredients For Khajur Burfi Recipe

  • 1 ½ cups (338g) dates/khajur
  • ¼ cup (35g) almonds/badam
  • ¼ cup (31g) pistachios/pista
  • ¼ cup (37g) cashews/kaju
  • ¼ cup (27g) walnuts
  • 2 tablespoon clarified butter/ghee
  • 3 tablespoon poppy seeds/ khus khus
  • ¼ cup (31g) dried cranberry (optional)

Steps In Making Khajur Ki Burfi

  1. Remove the seeds from the dates and chop them in small pieces.
  2. Roughly chop all the dry fruits like cashews, pistachios, almonds and walnuts.
  3. In a heavy bottom pan dry roast the poppy sweets for 2-3 minutes till they turn light golden brown and release an aromatic smell.
  4. In a pan add half the ghee and once it melts add all the dried fruits like cashew, almonds, walnuts, pistachios and roast for 3-4 minutes till they release an aromatic smell. Once done remove them in a plate
  5. In the same pan add the rest of the ghee and once it melts add the chopped dates to it. Cook for 3-4 minutes on medium flame. The dates will be hard and sticky earlier but once they cook they will turn soften.
  6. Once done lower the flame and add all the roasted nuts, poppy seeds and dried cranberry and mix till everything is well combined.
  7. Transfer it onto a board and let it cool down for 2-3 minutes.
  8. Now divide the mixture into two parts and gently roll each of them into cylindrical shape by pressing them with your palm.
  9. Spread some poppy seeds and pistachios and roll the log onto it for presentation. (optional)
  10. Take an aluminium foil and cover the khajur burfi rolls in it wrapping them tightly from the sides.
  11. Keep the logs in the refrigerator for 30 minutes to firm up.
  12. Remove the rolls from the foil and cut them into half cm size round pieces.
  13. Store in an airtight container in the refrigerator for upto 2 months.

Recipe Notes For Khajur Ki Burfi

  • Can grind the dates in a mixer grinder till it forms a soft paste. ( Don’t add water)
  • Chop the nuts in medium size as it will be difficult to form khajur burfi rolls with large pieces of nuts.
  • Can use any dried nuts of your choice, just keep the final measurements same.
  • Don’t add extra nuts else it will be difficult to form logs.
  • These dont need extra sugar as dates naturally sweet.

8. Now add the finely chopped dates it in.

9. Cook for 3-4 minutes on medium flame. The dates will be hard and sticky earlier but once they cook they will turn soften.

10. The dates have turned soft and are perfectly cooked.

11. Add the roasted nuts.

12. Add the roasted sesame seeds.

13. Add dried cranberries.

15. Mix till everything is well combined.

16. The khajur burfi mixture looks perfect now.

17. Remove it on a board and let it cool down for 2-3 minutes.

18. Roll it into log.

19. Now divide the mixture into two parts.

20. Gently roll each of them into cylindrical shape by pressing them with your palm.

21. Spread some poppy seeds and pistachios. (optional)

22.  Roll them log onto it for presentation. (optional)

23. The logs look perfect now.

24. Take an aluminium foil and cover the khajur burfi rolls in it wrapping them tightly from the sides.

25. Keep the logs in the refrigerator for 30 minutes to firm up.

26. Remove the rolls from the foil and cut them into half cm size round pieces.

27. Store in an airtight container in the refrigerator for upto 2 months.
