Red Sauce Pasta – Pasta Arrabbiata

Ingredients

To Boil Pasta
  • 2 cups (200g) dry pasta
  • 4 cups water (to boil pasta)
  • ½ teaspoon salt
  • 1 tablespoon olive oil
Red Sauce Pasta
  • 5 Tomatoes (fully ripened)
  • 1 onion (medium) finely chopped
  • 10-12 garlic cloves finely chopped
  • 3 tablespoons olive oil
  • 1 teaspoon chilli flakes
  • ½ teaspoon black pepper powder
  • ½ teaspoon mixed herbs/oregano
  • salt to taste

Steps In Making

To Boil Pasta
  1. In a pan add water and bring it to a boil. Now add salt and olive oil. Further, add the penne pasta and boil it on a medium flame for 8-9 minutes or until soft.
  2. To check if the pasta is perfectly cooked, cut it with a knife and it will easily cut.
  3. Take a sieve/colander and rinse the excess water and keep it aside.
Red Sauce Pasta
  1. To make the red sauce, take 5 large juicy tomatoes. Make a small ‘x’ cut at the bottom of the tomatoes.
  2. In a pan of hot boiling water add all the tomatoes and let them boil for a minute or until the skin starts to peel.
  3. Now immediately transfer the tomatoes in a bowl filled with chilled water and ice cubes. (ice batch)
  4. Let them rest in the chilled water for a minute, so they cool down. Now peel the skin starting from the ‘x’ mark you made.
  5. Now roughly chop all the blanched tomatoes.
  6. Transfer them in a mixer grinder and grind for a minute. Don’t grind into a fine paste, it should have a thick coarse texture.
  7. In a pan over a medium flame add olive oil. Now add chopped garlic, chilli flakes and oregano or mixed herbs. Saute them for around 2 minutes on low flame, so all the flavour of garlic and herbs is released.
  8. Now add chopped onions and saute them for around 2-3 minutes or until they become soft and turns translucent. Don’t overcook them.
  9. Further, add the tomato puree and give it a good stir.
  10. Cover it with a lid and let it simmer for around 4-5 minutes or until it becomes little thick. Now add salt and black pepper powder and mix.
  11. Lastly add the boiled pasta and mix till it is perfectly coated in the red sauce. Let it simmer for couple of minutes.
  12. Top it with grated cheese. (optional) Serve immediately.

Recipe Notes

  • You need large red, juicy tomatoes for this pizza sauce recipe.
  • Ice batch is important as it gives a shock to the tomatoes, as their skin shrinks and it becomes easy to peel them.
  • Always cook the garlic and herbs on low flame for extra flavour, else they might burn.
