10 Minute Sweet Corn Soup- Restaurant Style

Ingredients

  • ½  cup sweet corn, fresh or frozen
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 1 tablespoon garlic finely chopped
  • ½  cup sweet corn, fresh or frozen
  • ¼ cup cabbage finely chopped
  • ¼ cup carrots finely chopped
  • ¼ cup beans finely chopped
  • ¼ cup capsicum finely chopped
  • 2 ½ cups (600 ml) hot water
  • ½ teaspoon white pepper powder
  • 1 teaspoon sugar
  • 1 tablespoon corn flour + 4 tablespoons water
  • salt to taste
  • 1 tablespoon butter
  • 2 tablespoon spring onion

Steps In Making

  1. Take half cup sweet corn and puree it in a mixer grinder until smooth.
  2. In a pan add oil, butter and once it turns hot add garlic and sauté it for a minute.
  3. Now add sweet corn and cook for a minute in butter and garlic. This will add a great taste.
  4. Further add all the vegetables, finely chopped cabbage, beans, carrots and capsicum and sauté them for 2 minutes. Do not over cook them.
  5. Add the pureed corn and cook for another minute.
  6. Now add hot water and mix well. Let the soup simmer on medium flame for 5-6 minutes. Remove the froth that collects on the top.
  7. Now add white pepper powder and sugar
  8. Prepare a corn flour slurry with corn flour and water and mix well and while stirring it continuously add it in the soup. Add salt and let it simmer for another one minute.
  9. Lastly add butter and spring onions.
  10. Serve hot.

Recipe Notes

  • Do not add excess corn flour else the soup will become too thick.
  • Always add finely chopped vegetables else they will take lot of time to cook which might result in soggy vegetables.
  • You can use black pepper instead on white pepper.

    Artiji, in steps you have missed the step at which corn Puree is to be added. it is very much there in your video explanation but not present in the description. you may update if I am correct in pointing this. Bhoot and my daughter are an ardent follower. regards and seasons greetings
