Veg Manchow Soup – Restaurant Style

Ingredients

For Veg Manchow Soup
  • 2 teaspoons oil
  • 2 tablespoons garlic finely chopped
  • 1 tablespoon ginger finely chopped
  • 1 teaspoon green chilli finely chopped
  • 2 tablespoons spring onions (white part)
  • ¼ cup carrots finely chopped
  • ¼ cup cabbage finely chopped
  • ¼ cup yellow bell peppers finely chopped
  • ¼ cup red bell peppers finely chopped
  • 2 tablespoons sweet corn
  • 3 cups (750 ml) hot water
  • salt to taste
  • ½ teaspoon black pepper powder
  • 2 tablespoons green chilli sauce
  • 2 tablespoons red chilli sauce
  • 3 tablespoons dark soy sauce
  • 2 tablespoons white vinegar
  • ½  teaspoon sugar
  • 2 tablespoons spring onions finely chopped
  • 2 tablespoons fresh coriander
For Corn flour slurry
  • 2 tablespoons corn flour
  • ¼ cup water
For fried Noodles
  • 1 cup boiled noodles
  • 2 tablespoons corn flour
  • oil for frying

Steps In Making

For Fried Noodles
  1. In a bowl add boiled noddle’s and sprinkle corn flour on it. Now mix well so all the noodles are well coated with the corn flour.
  2. Heat oil in a kadai. Fry the noodles for 3-4 minutes on medium heat until they get a nice light brown colour and become crisp. Do not over cook, as the noodles will darken once they will cool down.
For Veg Manchow Soup
  1. Heat oil in a pan and then add finely chopped ginger, garlic and green chillies. Sauté them for a minute.
  2. Now add spring onions and sauté for another minute.
  3. Further add all the finely chopped vegetables; carrots, cabbage, red bell peppers, yellow bell peppers and sweet corn. Cook for 2 minutes on high heat, do not over cook them.
  4. Now add hot water and bring two to three boils.
  5. Now add salt, black pepper powder, vinegar, soy sauce, green chilli sauce, red chilli sauce and mix well. Let it simmer on medium flame for another 3-4 minutes.
  6. To prepare the corn flour slurry in a bowl add corn flour and water and mix till there are no lumps.
  7. Now while stirring it continuously, add the slurry in the soup so it doesn’t form any lumps. Cook for another 2-3 minutes. Finally add spring onions and fresh coriander.
  8. Veg Manchow soup is ready. Serve it in a bowl and top it with fried noodles and spring onions.

Recipe Notes

  • You can add any vegetables of your choice.
  • You can take any noodles, do not over boil them.
  • Always cut finely chopped vegetables else it will take a longer time to cook, which will result in soggy vegetables, whereas we want a nice bite and crunch in them.
  • You can always increase or decrease the amount of seasoning like soy sauce and vinegar as per your preference.
