Veg Manchow Soup

Ingredients

For fried Noodles
  • 1 cup boiled noodles
  • 2 tablespoons corn flour
  • oil for frying
For Veg Manchow Soup
  • 2 teaspoons oil
  • 1 tablespoon ginger finely chopped
  • 1 tablespoon garlic finely chopped
  • 1 onion thinly sliced
  • 1 green chilli finely chopped
  • ½ cup cabbage thinly sliced
  • ½ cup capsicum thinly sliced
  • ½ cup red bell peppers thinly sliced
  • ½ cup yellow bell peppers thinly sliced
  • 2 ½ cups (600 ml) hot water
  • ½ teaspoon black pepper powder
  • salt to taste
  • 2 tablespoons white vinegar
  • 3 tablespoons dark soy sauce
  • 1 tablespoon green chilli sauce
  • 1 teaspoon sugar
  • 2 tablespoons corn flour+ 4 tablespoons water
  • 2 tablespoons spring onions finely chopped
  • 1 tablespoon fresh coriander

Steps In Making

For Fried Noodles
  1. In a bowl add boiled noddle’s and add corn flour. Mix well so all the noodles are well coated with the corn flour.
  2. Heat oil in a kadai. Fry the noodles for 3-4 minutes on medium heat until they get a nice light brown colour and become crisp. Do not over cook, as the noodles will darken once they will cool down.
For Veg Manchow Soup
  1. Heat oil in a pan and then add finely chopped ginger and garlic. Sauté them for a minute.
  2. Now add onions and sauté for 2 minutes till they get a nice light golden colour.
  3. Further add thinly sliced cabbage, capsicum, red bell peppers and yellow bell peppers. Cook for 2 minutes, do not over cook them.
  4. Now add hot water and mix.
  5. Add salt, black pepper powder, vinegar, soy sauce, green chilli sauce and mix well. Let it simmer on medium flame for 3-4 minutes until it gets 5-6 boils.
  6. Further add the corn flour slurry and slowly keep mixing so it doesn’t form lumps. Cook for another 2 minute.
  7. Finally add spring onions and fresh coriander.
  8. Serve in a bowl and top it with spring onions and fried noodles.

Recipe Notes

  • You can add any vegetables of your choice.
  • You can take any noodles, do not over boil them.
  • Always cut finely chopped vegetables else it will take a longer time to cook, which will result in soggy vegetables, whereas we want a nice bite and crunch in them.
  • You can always increase and decrease the amount of seasoning like soy sauce and vinegar as per your preference.
