Ingredients
- 50g amchoor
- 1.5 cups (350ml) water
- 250g sugar
- 1 teaspoon kashmiri red chilli powder
- ½ teaspoon red chilli powder
- ½ teaspoon roasted cumin powder
- ½ teaspoon garam masala
- ½ teaspoon black salt
- regular salt to taste
- 1 teaspoon ginger powder
- 2 teaspoons melon seeds
- 2 teaspoons raisins

Steps In Making
- In a bowl add amchoor powder and water and mix well.
- Now in a pan add the above mixture and let it simmer on medium heat for couple of minutes.
- Now add sugar and mix well.
- Once the sugar melts completely, add the spices like; kashmiri red chilli powder, red chilli powder, cumin powder, garam masala, black salt, regular salt and ginger powder. Cook on medium heat for 2-3 minutes.
- The chutney will begin to thicken a little.
- Now add melon seeds and raisins and cook for another 10-15 seconds. Do not overcook because the amchoor chutney will thicken once it cools down.
- Le the chutney cool down completely.
- You can store it in an airtight container and keep it in the refrigerator for upto 6 months.
Recipe Notes
- Sugar can be replaced with jaggery.
- You can always adjust the quantity of sweetness as per your preference.
- Do not over cook the chutney. Keep it slightly thin because once it cools down it will thicken.
