Ingredients
- 8 no. soft dates
- ¼ cup water
- 3 cups (750ml) milk
- 10-12 almonds
- 2-3 walnuts
- 4-5 cashews
- 20-22 pistachios
- ¼ teaspoon turmeric powder
- ½ teaspoon ginger powder
- ¼ teaspoon cardamom powder
- ¼ teaspoon black pepper powder
- 1 pinch nutmeg powder

Steps In Making
- Soak soft dates in hot water for 10 minutes. Once they turn soft, remove the seeds. Do not throw the water in which the dates were soaked. Transfer them in a mixer grinder and grind until smooth.
- To grind the nuts, in a mixer grinder add almonds, walnuts, cashews, pistachios and grind for few 5 seconds. We need coarse texture, do not grind into a fine powder.
- To prepare the winter milk in a pan add milk and bring it to a boil.
- Now add the grounded nuts and let them simmer on medium heat for couple of minutes.
- Now add turmeric powder, ginger powder, black pepper powder and cardamom powder. Mix well and let the milk cook with the spices for another minute.
- Now add the dates puree we prepared earlier and mix well. Let it simmer on medium heat for another minute.
- Lastly add some nutmeg powder and give it a final mix.
- Hot winter milk is ready. Serve immediately.
Recipe Notes
- You can use any nuts of your choice.
- Use can use full fat or low fat milk.
- For extra sweetness you can add jaggery powder, honey or sugar.
