Whole Wheat Banana & Walnut Cake – Recipe Video

Ingredients

For Apple Sauce

  • 1 medium size apple (peeled)
  • 4 tablespoon (60ml) apple juice*
  • 1 tablespoon honey

For Whole Wheat Banana & Walnut Cake

  • 3 medium size bananas (fully ripened)
  • ¼ cup + 3 tablespoon (108g) applesauce
  • ½ cup (120ml) honey
  • 2 medium size eggs
  • ¼ cup (60ml) milk
  • 1 teaspoon vanilla essence
  • ½ cup (55g) roughly chopped walnuts
  • 1 ½ cup (192g) whole wheat flour
  • ¼ cup (32g) almond flour**
  • 1 teaspoon cinnamon powder (optional)
  • ¼ teaspoon salt
  • 1 teaspoon baking soda

Steps In Making

Apple sauce

  1. In a pan add chopped apples and juice and cook them over medium or low flame for 20-25 minutes or until soft and pulpy. Keep stirring them in the middle to avoid them from burning.
  2. Once done, add honey and keep it aside to cool.
  3. You can puree them in a blender if the apple pieces are too big.

Whole Wheat Banana & Walnut Cake

  1.  Preheat the oven at 170C (338F) and line a 9×5 inch loaf pan with butter and parchment paper.
  2. In a large bowl add chopped bananas and mash them.
  3. Now add apple sauce and eggs and give it a good mix. Then add vanilla essence and milk and mix until well combined.
  4. In another bowl sieve whole wheat flour, cinnamon powder, salt, baking soda and almond flour. Then add chopped walnuts and mix again.
  5. Now add the dry ingredients into the wet ingredients in two steps. Don’t over mix the batter else the cake will become hard and dense.
  6. Pour the cake batter in the prepared loaf pan. Now place it in the middle rack of the oven and bake for 60-65 minutes or until a toothpick inserted comes out with little crumbs attached to it.
  7. Let it cool down completely on a wire rack. The cake tastes better the next day.
  8. Store in an air tight container in a refrigerator for upto two weeks.

Recipe Notes For Whole Wheat Banana & Walnut Cake

  • *Water can be used instead of apple juice
  • **Almond flour can be replaced by regular whole wheat flour
  • Use room temperature ingredients.
