Steps In Making Homemade Pizza Sauce

  1. Make a small ‘x’ cut at the bottom of the tomatoes.
  2. In a pan of hot boiling water add all the tomatoes and let them boil for a minute or until the skin starts to peel.
  3. Now immediately transfer the tomatoes in a bowl filled with chilled water and ice cubes. (ice batch)
  4. Let them rest in the chilled water for a minute, so they cool down. Now peel the skin starting from the ‘x’ mark you made.
  5. Now roughly chop all the blanched tomatoes.
  6. Transfer them in a mixer grinder and grind for a minute. Don’t grind into a fine paste, it should have a thick coarse texture. Even if there are some tomato chunks left, don’t discard them. They will reduce in size once we cook our pizza sauce.
  7. In a pan over a medium flame add olive oil. Now add chopped garlic, chilli flakes and oregano or mixed herbs. Saute them for around 2 minutes on low flame, so all the flavour of garlic and herbs is released.
  8. Now add chopped onions and saute them for around 2-3 minutes or until they become soft and turns translucent. Don’t overcook them.
  9. Further, add the tomato puree that we prepared earlier and give it a good stir.
  10. Cover it with a lid and let it simmer for around 10-12 minutes or until it becomes little thick.
  11. Further add black pepper powder, salt and sugar and mix well. Once again cover it with a lid and cook for another 4-5 minutes.. (Don’t overdo, and make it too dry. )
  12. Finally, add the tomato ketchup and fresh basil leaves, simmer for another couple of minutes and switch off the flame. Your homemade pizza sauce is ready!
  13. Let it cool down completely. Store in an airtight container and store in the refrigerator for up to a week. Freeze and store it in an airtight container for up to 2 months.

Recipe Notes

  • You need large red, juicy tomatoes for this pizza sauce recipe.
  • Ice batch is important as it gives a shock to the tomatoes, as their skin shrinks and it becomes easy to peel them.
  • Tomato ketchup up gives a good flavour to this pizza sauce, will highly recommend you use it.
  • The pizza sauce might thicken slightly in the refrigerator. Let it thaw before using or add some warm water.
  • If you are freezing the pizza sauce then let it thaw in the refrigerator overnight before using.
