Lauki Ka Nashta | Lauki roastie

Ingredients

For the batter
  • 1 Small lauki
  • 1 cup (200g) suji/rava/ semolina
  • 1 cup (250g) dahi/ curd
  • water, as required
  • ¼ cup onion
  • ¼ cup capsicum
  • ¼ cup sweet corn
  • ¼ cup green peas
  • 1 green chilli
  • 1 teaspoon ginger
  • ½ teaspoon black pepper powder
  • 1 teaspoon red chilli flakes
  • 1 teaspoon jeera/ cumin seeds
  • 2 tablespoons fresh coriander
  • salt to taste
  • 1 sachet eno/ fruit salt
For The Vegetable Raita
  • 2 cups (500g) dahi/ curd
  • ¼ cup onion
  • ¼ cup tomato
  • ¼ cup cucumber
  • 2 tablespoons fresh coriander
  • 1 green chilli
  • ½ teaspoon jeera powder/ cumin powder
  • ¼  teaspoon black pepper
  • ½ teaspoon rock salt
  • salt to taste

Steps In Making

  1. Peal and grate lauki with the help of a grater and keep it aside.
  2. In a large bowl add suji, dahi, water and mix well.
  3. Now add the grated lauki, chopped onions, capsicum, ginger, green chillies, green peas and sweet corn.
  4. Further add salt, red chilli flakes, black pepper powder, cumin seeds, fresh coriander and salt. Mix till everything is well combined. The batter should have a medium consistency, it shouldn’t be very thick nor thin.
  5. Now let the batter rest for 10 minutes.
  6. If the batter has become thick then add little water. Now add the fruit salt along with a tablespoon of water and gently mix it again. This will make the roasties very soft and fluffy.
  7. To make the lauki rostie, in a pan heat oil and pour a large spoonful of the mixture in it.
  8. Cover it with a lid and cook from both slides for 3-4 minutes or till it gets a crispy texture and golden brown colour.
  9. Serve hot with the raita we prepared.

Recipe Notes

  • You can use carrots or peas too, they taste delicious.
  • After adding the fruit salt do not let the batter rest for long, cook it immediately.

Steps In Making Vegatble Raita

  1. In a bowl add yoghurt and whisk until smooth.
  2. Now add finely chopped onions, tomatoes, cucumber, fresh coriander, green chillies, rock salt, black pepper powder, cumin powder and mix well.
  3. The vegetables raita is ready. Serve with the lauki roasties.
