Ingredients
Nutri roastie
- 1 cup soya chunks
- 1 cup rice
- 2 green chillies
- 1 inch ginger
- 8-10 garlic cloves
- 1 cup yoghurt
- ¼ cup green capsicum, finely chopped
- ¼ cup tomatoes, deseeded
- ¼ cup onions, finely chopped
- ¼ cup carrots, grated
- 2 tablespoons green peas
- ¼ cup sweet corn
- 2 tablespoons fresh coriander, finely chopped
- ¼ teaspoon black pepper powder
- ½ teaspoon chilli flakes
- salt to taste
- ½ teaspoon cumin seeds
- 1 sachet fruit salt
- oil for cooking
Cucumber dip
- 1 cup curd
- 1 medium cucumber grated
- 1 green chilli, finely chopped
- 2 tablespoons fresh coriander, finely chopped
- ¼ teaspoon black salt
- ¼ teaspoon roasted cumin powder
- salt to taste

Steps In Making
- Soak soya chunks in hot water for 30 minutes. Now transfer them in a mixer grinder along with few tablespoons of water. Now grind until it gets a coarse texture. Please note we do not want to make a fine paste.
- Soak rice in water for 30 minutes. Now remove the excess water and add the rice in a mixer grinder along with green chillies, ginger, garlic cloves and yoghurt. Grind for a minute or until it gets a coarse texture.
- Now add the soya chunks we grounded in the the rice mixture and grind for another 15-20 seconds or until everything is well combined.
- Now transfer the batter in a large bowl.
- Further add all the vegetables; capsicum, tomatoes, onions, carrots, peas, sweet corn and fresh coriander.
- Now add black pepper powder, chilli flakes, salt, cumin seeds and mix well. Let the batter rest for 5 minutes. The batter shouldn’t be very thick nor thin, it should have medium consistency.
- Finally add fruit salt and give it a gentle mix.
- To make the high protein nutri roasties, heat oil in a pan and then add a large spoonful of the batter in it.
- Cover it with a lid and cook from both slides for 3-4 minutes or till it gets golden brown colour and crispy texture on the top
- Nutri roasties are ready, serve them with the cucumber dip.
- The batter can be store in the refrigerator for upto 3 days.
Cucumber dip
- To prepare the cucumber dip in a bowl add yoghurt and beat until smooth.
- Now grate the cucumber and remove all its water by gently squeezing it in between your palms
- Add it in the yoghurt along with green chillies, fresh coriander, black salt, cumin powder and regular salt.
- Now mix till everything is well combined. The cucumber dip is ready.
Recipe Notes
- You can use any vegetables of your choice, just make sure they are finely chopped.
- After adding the fruit salt do not let the batter rest for long, cook it immediately.
- You can prepare the batter at night and in the morning just add salt and fruit salt.
