Tomato Soup – No Corn Flour. No Cream.

Ingredients

For tomato soup
    • 1 teaspoon oil
    • 1 tablespoon butter
    • ¼ teaspoon black peppercorns
    • 1 inch ginger
    • 4-5 garlic cloves
    • 1 bay leaf
    • 1 large onion
    • 8 medium red juicy tomatoes
    • 2 tablespoons fresh coriander
    • salt to taste
    • 1 teaspoon Kashmiri red chilli powder
    • 1 tablespoon sugar
    • 3 cups (750ml) hot water
    • 2 tablespoons tomato ketchup
    • ¼ teaspoon black pepper powder
    • salt to taste
    • 1 tablespoon butter
For Bread croutons
  • 1 tablespoon oil
  • 1 tablespoon butter
  • 4 bread slices
  • salt to taste
  • 1 pinch black pepper powder

Steps In Making Tomato Soup

  1. Heat oil and butter in a pan.
  2. Now add black pepper corns, garlic cloves, chopped ginger and bay leaf. Sauté for a minute.
  3. Now add sliced onions and cook for 2-3 minutes or until they get a light golden-brown colour.
  4. Now add chopped tomatoes, fresh coriander, and salt. Mix well and cook for 3-4 minutes.
  5. Further add Kashmiri red chilli powder and sugar and cook for another 3-4 minutes. The tomatoes will turn soft and mushy.
  6. Now add hot water and let it simmer on medium heat till it gets 2-3 boils.
  7. Once done let the mixture cool down completely. Remove the bay leaf and grind it in a mixer grinder until smooth.
  8. With the help of a sieve, strain the tomato soup.
  9. In a pan add the tomato soup, tomato ketchup, salt and black pepper powder.
  10. Let it simmer on medium heat till it gets 2-3 boils.
  11. Lastly add a tablespoon of butter and mix well.
  12. Thick and creamy tomato soup is ready.

Recipe Notes

  • Use fully ripened red and juicy tomatoes.
  • You can skip butter if you want to make it more healthy.

Steps In Making Bread Crotons

  1. Heat oil and butter in a pan.
  2. Now take 4 bread slices, with the help of a sharp knife remove its sides and cut them into small square shapes.
  3. Transfer them in a pan and toast on medium heat for 2 minutes from each side. They will get a nice golden brown colour and a crispy texture.
  4. Sprinkle some salt and black pepper powder. The bread crotons are ready.
