Besan Barfi – 3 Ingredient

Ingredients

  • 2 cups (180g) gram flour/besan
  • 1½ cups (150g) sugar
  • 1/3 cup (80ml) clarified butter/ghee
  • 1/3 cup (80ml) water
  • ½ teaspoon cardamom powder (optional)
  • 2 tablespoons chopped almonds for garnish (optional)

Steps In Making Besan Barfi

  1. Place a pan over medium flame and add ghee in it.
  2. Once the ghee becomes hot, add the gram flour and while stirring it continuously roast for 5-6 minutes. At this point the besan might appear dry but don’t add extra ghee, as the gram flour will release ghee once it is well roasted.
  3. After 5-6 minutes it will start to form granules, keep stirring for another 8-10 minutes or until the ghee is released. Besan will also change it’s colour to light brown.
  4. Once ghee is released mixture will have a paste type consistency now. Switch off the flame and keep stirring for couple of more minutes to avoid it from burning, as the pan is still very hot.
  5. To make the sugar syrup, place a pot over medium flame and add water and sugar in it and bring it to a boil.
  6. Now add cardamom powder and yellow colour and keep stirring till it forms a one string consistency. It will take 2-3 minutes.
  7. To check the one string consistency, take a drop of the sugar syrup between your finger and press it together, the syrup will feel sticky and will form a single thread.
  8. Now add the sugar syrup in the besan barfi mixture and keep stirring it till everything is well combined and cook for another 2 minutes.
  9. In a tray greased with ghee, pour the besan barfi mixture and smoothen the top. Lastly garnish with some chopped almonds and let it rest for 30 minutes to an hour or until it firms up.
  10. Now with a sharp knife give square or rectangle cuts and serve.
  11. Store it in the refrigerator in an airtight container for upto a month.

Recipe Notes

  • Use thick variety of gram flour.
  • Do not add extra ghee in the besan while roasting, else the barfi wont set properly.
  • You can increase the quantity of sugar as per your requirement.
  • Sugar can be replaced with equal amount of jaggery/gud.

10. Cook till it gets a one string consistency. To check, take a drop of the sugar syrup between your finger and press it together, the syrup will feel sticky and will form a single thread.

11. Now add the sugar syrup in the besan barfi mixture and keep stirring it till everything is well combined and cook for another 2 minutes.

12. The besan barfi mixture is ready now.

13. In a tray greased with ghee, pour the besan barfi mixture.

14. With the back of a spoon, give a smooth finish to the besan barfi.

15. Press it around the corners and give it a fine finish.

16. Garnish with some chopped almonds and let it set for an hour or until it firms up.

17. Now with a sharp knife give square or rectangle cuts and serve.
