Ingredients
- 5 medium boiled potatoes
- 1 small onion finely chopped
- 1 small red bell pepper finely chopped
- 1 small capsicum finely chopped
- 1 small yellow bell pepper finely chopped
- 2 tablespoons carrots finely chopped
- 1 teaspoon red chilli flakes
- 1 teaspoon oregano
- ½ teaspoon black pepper powder
- salt to taste
- 1 tablespoon ginger garlic paste
- 2 tablespoons corn flour
- 2 tablespoons bread crumbs
- oil for frying
For Coating
- 2 tablespoons refined flour
- 2 tablespoons corn flour
- water as required
- 1½ cup bread crumbs

Steps In Making
- In a large bowl add boiled potatoes and mash them with the help or a masher or grate them.
- Now add finely chopped onions, capsicum, red and yellow bell peppers, carrots, red chili flakes, oregano, black pepper powder, salt, ginger garlic paste and mix well.
- Further add corn flour and bread crumbs and mix till everything is well combined. The veg nuggets mixture is ready.
- To shape the nuggets, grease your hands with oil and take 2 tablespoons of the mixture and give them a rectangle shape. Similarly shape all the nuggets.
- To prepare the slurry in a bowl add corn flour, refined flour and water. Mix till it becomes smooth. It should have medium consistency, not very thick nor thin.
- Now coat the nugget in the slurry and immediately coat them in fresh crumbs from all sides. Similarly coat the rest of them.
- Keep them in the refrigerator for 15 minutes before frying. You can also store them in an airtight container and freeze them for upto a month.
- Heat oil in a kadai and once its medium hot add the nuggets and fry for 2-3 minutes from each sides or until golden brown and crispy.
- Serve immediately with ketchup or chutney.
Recipe Notes
- You can use any vegetables of your choice.
- Do not add extra corn flour while preparing the dough, else it will have a raw taste.
- You can replace bread crumbs with crushed corn flakes too.
- Keep the nuggets in the refrigerator before frying, they wont break while frying.
